Ingredients

Base Ingredients

 1 cup cottage cheese (full-fat or low-fat)

 2 large eggs
 1½ cups almond flour
 1 teaspoon baking powder

   Seasonings

 ¼ teaspoon garlic powder

 ¼ teaspoon onion powder
 1 tablespoon olive oil, plus extra for cooking
Salt and pepper to taste
 Fresh herbs for garnish (optional)

Instructions

Whisk cottage cheese and eggs until smooth. Add almond flour, baking powder, and seasonings. Stir to form thick batter

 

Preheat non-stick skillet over medium heat. Coat surface with olive oil

 

Scoop ¼ cup batter onto skillet, spread into round shape. Cook 3-4 minutes per side until golden

 

Repeat with remaining batter, adding oil as needed. Garnish with herbs and serve warm
